Gravlax Board
It's a delicious crowd favorite, easy to eat, and easy to prep.
This blini recipe creates bite-sized pancakes perfect for my gravlax board. It's a breeze for family or guests to assemble their own, just the way they prefer. We garnish the blinis with smoked salmon, crème fraîche, capers, red onion or even caviar, topped with a sprig of dill for an elegant touch. And my kids always enjoy them plain as well!

Blood Orange Pound Cake
For something sweet...
My go to for a delicious sweet is this blood orange pound cake. Blood oranges are commonly sweeter and less acidic than other orange varieties, boasting a pleasantly bitter note. Certain people claim to taste a subtle hint of raspberry flavor in them as well.

Deviled Eggs
Easy to pre-boil your eggs beforehand, delicious, and quick!
I love the different variations Williams Sonoama made in their test kitchen.
I always make sure to use cage free, organic pasture raised eggs. The yolk quality makes a worlds difference. Plus, good quality mayonaise and of course - grey poupon.
Don't forget to have your ice bath ready for those boiled eggs!

Veronica’s Go To
Strawberry Rhubarb Pie
Pictured above: Different pies I've made. Peach, cherry and rhubarb pie.
I like to make the filling early and pop it in the fridge to marinate all together for an hour or so and then make the pie closer to when I'll be serving it.
Also, important to let it fully cool so the filling thickens a little after it comes out of the oven and holds together better. If you don't have "minute" tapioca, I use cornstarch!
Rhubarb season is early spring to early summer so perfect timing for Mother's Day and the color is so pretty and pink!
The Perfect Mimosa
Serving mimosas at brunch adds a touch of elegance and festivity to the meal. The refreshing blend of champagne (Kristin's favorite is Veuve) or sparkling wine with orange juice complements a variety of brunch dishes, enhancing the overall dining experience. Mimosas are light and refreshing, making them an ideal accompaniment to both sweet and savory brunch items like we have curated above.
